Wine-making
precess: The grapes are separated from
the stalks, pressed and undergo the maceration
process for about 15 days in steel vats
at a given, constantly checked temperature.
At the end of it the malolactic fermentation
takes place. Maturation on the thin dregs
for the following 8 months.
Color: Bright ruby-red with purplish
reflections.
Bouquet: Wide and winy-smelling,
with the typical grassy scent with nuances
reminding ripe fruit, hay and pepper. With
the bottle maturation the greenest scents
are replaced by ripe and soft cherry and
blueberry fragrances.
Flavor: Warm, enveloping, as tannic
as it should be, with a perfect correspondence
between taste and scent that becomes more
apparent with bottle maturation. The final
sensation tastes clean and fresh.
How to serve it with: Serve it at
18°/20° C in a wide red-wine glass.
How to savor it with: Salami belonging
to the Veneto tradition, middle ripening
cheese, risotto with meat liver, grilled
veal and pork meats.
Useful information: Cabernet Franc,
a vine coming from the Bordeaux's area.,
features characteristics very close to those
of Cabernet Sauvignon. That is why it is
thought to be a successful mutation of the
latter. In France it is used for giving
freshness and long life to Bordeaux's vine
blends and can be found pure, with excellent
results. It is one of the most traditionally
grown vine in the area of the Piave river
and we have wanted to honor this truly important
vine by proposing a type of wine produced
from first-class grapes grown in our best
vineyards that is pleasant, gratifying and
suitable to all circumstances. Cabernet
Villa Brunesca originates from the wine-making
process of 100% Cabernet Franc grapes. |
