Wine-making
process: The grapes are separated from
the stalks, pressed and undergo the maceration
process for about 10 days in steel vats
at a given, constantly checked temperature.
At the end of it the malolactic fermentation
takes place. Maturation on the thin dregs
for the following 6 months.
Color: Bright ruby-red with purplish
reflections.
Bouquet: Winy smelling, elegant with
a ripe-berry scent, especially raspberry.
Flavor: Full, enveloping and persistent
in your mouth.
How to serve it: Serve it at 18°/20°
C in a wide red-wine glass.
What to savor it with: Salami, cold
pork meat and middle ripening cheese, '
baccalà in tecia' ( a special dish
from the Veneto region, based on dried salted
cod), baked salmon, roasted white meat and
grilled fish.
Useful information: Malbech is a
type of wine once popular in Bordeaux that
has been replaced by Merlot. We have decided
to exploit this vine, traditionally grown
in our areas, as we have always believed
in the originality and versatility of its
grapes. Excellent to strengthen the elegant
Merlot and Sauvignon, we use these grapes
pure, thus obtaining a type a wine characterized
by captivating cherry and chocolate nuances,
enveloping and mellow. The "Campo di
Chiesa" vine has been recently planted
and has a high grape-vine density (5000
vines per hectare). We have chosen the Guyot
plaanting system. |
