Wine-making
process: Fermentation on the grapes'
skins for over ten days in steel vats at
a checked temperature with malolactic fermentation.
Mellowing in 225 l. French oak barrels for
12 months.
Color: Intense and deep cherry red.
Bouquet: After a short necessary
period of oxygenation following uncorking,
Merlot Vigna Mora gives out ripe red fruit
fragrances and an elegant spiced quality
that never hides the typicality of the vine.
Flavor: Gentle and never excessive
in your mouth, its tannins are mature and
the acidity level is excellent. The final
taste is clean and persisting.
How to serve it: Serve it at 18°
C in wide red wine glasses.
Alcohol: 13 % vol.
Ph: 3,80.
Total Acidity: 5,15 g/l.
What to savor it with: With meat liver,
red meat stew, baked lamb loin or lamb chops
and grilled noble meats.
Useful information: Red Grapes originating
in Bordeaux, the bunches have few grapes.
They are of average size and have thin skin.
Thanks to the early mellowing, it is also
suitable to be grown in rigorous climates.
It is usually the inseparable companion
of the more austere and aristocratic cabernet
sauvignon, together with Cabernet Franc
in the so-called Bordeaux blending. We have
decided to produce it pure to pay homage
to Villa Brunesca's traditional view of
Merlot. That is why we have chosen lands
capable of retaining humidity and being
characterized by high density of planted
vines in order to obtain top-quality grapes
from "Vigna Mora" vine, which
gives a kind of Merlot of international
blending with the characteristic fruity
fragrances.
