Wine-making
process: The grapes, harvested between
the end of August and the beginning of September,
are pressed and the must obtained in this
way, after static settling, is fermented
in steel tanks at a given, checked temperature;
then, maturation takes place on fine yeast
for about six months, with partial malolactic
fermentation.
Color: Deep pale yellow.
Bouquet: The fragrance is fruity
(peach) and flowery ( wisteria, artemisia,
lime).
Flavor: Dry, full, balanced and well-persistent,
the final flavor is clean and pleasantly
bitter.
How to serve it: Serve it at 10-12°
C in white wine glasses.
Alcohol: 13% vol.
What to savor it with: The good structure
of Pinot Grigio Villa Brunesca makes it
suitable for starters and tasty first courses,
such as 'sarde in saor', sauté mussels
and clams, risotto and pasta with tasty
fish, such as shellfish and scorpion fish.
Useful Information: It originates
in France, where it is one of the most known
mutation of Pinot Nero. It has grapes whose
color ranges form blue-grayish to pink-brownish.
This vine is fairly spread in Italy, above
all in Eastern Veneto, where it can give
gentle wines with delicate flavors, whose
components and color are richer than those
of most other white wines. We have always
strongly supported the potentiality and
elegance of this wine and therefore we have
committed ourselves to choosing the clones
and the growing systems most suitable for
its production. Today, Pinot Grigio is the
most popular white grape vine in the firm.
The mineral richness of the soil, the high
density of vines (5000 per hectare) and
the low production per foot allows obtaining
healthy and ripe grapes. |
