Wine-making
process: Grape-picking takes place during
the first part of September: it is followed
by the separation of the grapes from the
stalks, gently pressing of the grapes with
static settling of must and beginning of
alcoholic fermentation in 225 l. French
oak barrels with frequent batonnage. The
vine mellows for 8 months.
Color: Intense yellow with golden
nuances.
Bouquet: The typical fragrances,
such as peach, wisteria and lime flowers
are delicately blended with soft fragrances
of vanilla, butter and spices.
Flavor: The flavor is wide, viscous
and reminds the fragrance. It leaves in
your mouth a final, long, clean flavor with
a pleasant, delicate, slightly bitter note,
typical of this vine.
How to serve it: Serve it at 12-14°C
in white wine glasses.
Alcohol: 13,5 % vol.
Ph: 3,70.
Total Acidity: 4,8 g/l.
What to savor it with: It can be
savored with first courses, such tagliatelle
and rabbit, risotto with chicory and sausages,
important baked fish, tasty fresh cheese
or average maturation cheese.
