Wine-making
process: The grapes, gathered towards
the first half of September are separated
from their stalks and gently pressed. The
following phases are: settling of the must,
alcoholic fermentation at a checked temperature
and maturation in steel vats on the fine
dregs for about 4 months. The malolactic
fermentation does not take place.
Color: Bright light yellow with green
nuances.
Bouquet: The fragrance is clean and
persisting, reminding exotic fruit, yellow
peppers, sage and tomato leaves.
Flavor:
How to serve it: Serve it at 10-12°C
in white wine glasses.
What to savor it with: Excellent
to be enjoyed as an aperitif, it is the
ideal drink for thinly sliced draw fish
with a dressing, cured meats, such as ham,
fresh cheeses, such as buffalo mozzarella
and goat cheese, caviar and first courses
with vegetables.
Useful information: Fragrant and
flavored variety from which some of the
most popular and worldwide appreciated dry
white wines are produced, it seems to have
French origins, in the Bordeaux area. This
vine has been extensively grown in our region
for many years, as our soil is ideal for
the production of excellent grapes, which,
gathered when ripe, can give an elegant
